And it’s easy to find great salmon fillets in the seafood section of any high quality Edmonton meat market. Start building your salmon repertoire with these simple tips.
Welcome to Salmon 101!
First, choose your fillets carefully. Don’t just walk into any Edmonton meat market and bring home the first pink slab you see. Make sure your salmon is wild caught, natural pink (not dyed) and smells like sunlight in an empty room, not like fish (Reject fishy smelling salmon). Toss together a cup of diced kiwi with a cup of diced mango, a little chopped cilantro, and a splash of orange juice. Bring your skillet to medium high heat, drizzle in some olive oil, and heat your fillets for about five minutes on each side. Lay each fillet on a plate; pour on the fruit mixture, and voila!
The Oven or Toaster
Heat the oven or toaster to 375 degrees and lay the fillets in a broiling pan. Dissolve a half cup of brown sugar in a small bowl of soy sauce, pour the syrup on the fillets, and let them bake for about 8 minutes.
Dice a bowl of mangoes, strawberries, and peaches, splash them with orange juice, and lay your fillets on a medium hot grill (using a special pan designed for fish). Take them off in about seven minutes, or as soon as they flake with a fork. Pour the fruit mixture over the fish and serve with couscous or fresh spring greens. Mouthwatering mango madness!
