The term “venison”, which comes from the Latin word “to hunt”, refers to the meat of antlered animals and provides a wild flavor that comes from the natural foods that the animal eats.

When it comes to Alberta-raised deer, we offer a beautiful selection of smaller cuts. Our Alberta-raised elks offer an amazing selection of medium cuts.

Depending on supply, we are also sometimes able to stock ground venison and deer steaks as well as elk ribeye steak and ground elk.

If you’ve never tried venison before, it doesn’t take like chicken! Nor does it taste like beef. However, the overall effect of venison meat is similar to beef - meaning that it makes a flavorful substitution in traditional beef dishes such as hamburgers, stews, and steaks.

How to Cook Venison

Venison is a very lean type of meat, so it’s easy to overcook it. Because it is low in fat, it is best served medium-rare.

When cooking venison in a pan, be sure to oil the meat and not the pan. This will help avoid having the venison stick to your pan, grill, or barbecue.

Venison can also be beautifully roasted. When roasting larger cuts, sear all sides of the meat first to seal in the juices. Adding some salt will give the venison a crispy texture!

Once the venison is cooked, let it rest uncovered for 5-10 minutes to allow the juices to evenly disperse.

Last tip: Venison pairs well with a lot of interesting ingredients such as bacon, mushrooms, anchovies, thyme, tomatoes, and red wine.
